Next, create the ice cream base. Beat sweetened condensed milk and cream cheese until smooth. Then, add heavy cream, vanilla extract, and a pinch of salt. Continue beating until the mixture is light and fluffy with soft peaks.
Now, combine the filling and the ice cream base. Spread one-third of the ice cream base into a deep pan. Spoon one-third of the cinnamon roll filling on top and swirl with a knife. Repeat the layering two more times.
Finally, cover the pan with a lid or plastic wrap and freeze for at least 8 hours. Once frozen, you can serve the ice cream on its own or between brioche donuts for a delightful treat.
